Southwest Veggie Dip

Ingredients 


  • 1/2 cup Rokeyroad Quark
  • 1/4 cup mayonnaise
  • Juice of 1 lime
  • 1 tbsp taco seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp chili powder
  • Salt & pepper to taste
  • 1 tbsp chopped cilantro (optional)
  • 1/2 diced red onion
  • 1 diced avocado
  • 1 cup chopped cherry tomatoes
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 can corn, drained
  • 1 can black-eyed peas, drained
  • 1 can black beans, drained

INstructions


  1. In a large bowl, whisk together the Rokeyroad Quark, mayonnaise, lime juice, taco seasoning, garlic powder, chili powder, and salt & pepper.
  2. Add all remaining ingredients and gently fold to combine, being careful not to mash the avocado.
  3. Chill for 20–30 minutes (optional, but helps the flavors come together).
  4. Serve with tortilla chips, pita chips, or fresh veggies.
