Southwest Veggie Dip

Ingredients
- 1/2 cup Rokeyroad Quark
- 1/4 cup mayonnaise
- Juice of 1 lime
- 1 tbsp taco seasoning
- 1/2 tsp garlic powder
- 1/2 tsp chili powder
- Salt & pepper to taste
- 1 tbsp chopped cilantro (optional)
- 1/2 diced red onion
- 1 diced avocado
- 1 cup chopped cherry tomatoes
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 can corn, drained
- 1 can black-eyed peas, drained
- 1 can black beans, drained
INstructions
- In a large bowl, whisk together the Rokeyroad Quark, mayonnaise, lime juice, taco seasoning, garlic powder, chili powder, and salt & pepper.
- Add all remaining ingredients and gently fold to combine, being careful not to mash the avocado.
- Chill for 20–30 minutes (optional, but helps the flavors come together).
- Serve with tortilla chips, pita chips, or fresh veggies.
