Fruity Ice Cream Cake

Ingredients 


  • 1/2 gallon Rokeyroad Creamery Blueberry or Fruit Ice Cream
  • 1/2 gallon Rokeyroad Creamery Vanilla Ice Cream
  • Fruit preserves (blueberry or matching flavor)
  • Crumb pie topping
  • Homemade whipped cream

INstructions


  1. Line the bottom of a springform pan with parchment paper.
  2. Soften the fruit-flavored ice cream and spread evenly into the pan. Freeze until firm, about 1 hour.
  3. Spread a thin layer of fruit preserves and sprinkle with crumb pie topping.
  4. Soften and spread the vanilla ice cream over the top. Top or pipe with whipped cream.
  5. Freeze until fully set, at least 4 hours or overnight.
