Fruity Ice Cream Cake

Ingredients
- 1/2 gallon Rokeyroad Creamery Blueberry or Fruit Ice Cream
- 1/2 gallon Rokeyroad Creamery Vanilla Ice Cream
- Fruit preserves (blueberry or matching flavor)
- Crumb pie topping
- Homemade whipped cream
INstructions
- Line the bottom of a springform pan with parchment paper.
- Soften the fruit-flavored ice cream and spread evenly into the pan. Freeze until firm, about 1 hour.
- Spread a thin layer of fruit preserves and sprinkle with crumb pie topping.
- Soften and spread the vanilla ice cream over the top. Top or pipe with whipped cream.
- Freeze until fully set, at least 4 hours or overnight.
