Ice Cream Cake

Ingredients 


  • 1/2 gallon Rokeyroad Creamery Chocolate or Coffee Ice Cream
  • 1/2 gallon Rokeyroad Creamery Vanilla Ice Cream
  • Homemade brownies, baked and cooled (cut into pieces)
  • Homemade chocolate fudge
  • Homemade whipped cream

INstructions


  1. Line the bottom of a springform pan with parchment paper.
  2. Soften the chocolate or coffee ice cream slightly and spread evenly into the pan. Freeze until firm, about 1 hour.
  3. Add a layer of brownie pieces and drizzle with chocolate fudge.
  4. Soften and spread the vanilla ice cream over the top, smoothing evenly. Top or pipe with whipped cream.
  5. Freeze until fully set, at least 4 hours or overnight.
