Ice Cream Cake

Ingredients
- 1/2 gallon Rokeyroad Creamery Chocolate or Coffee Ice Cream
- 1/2 gallon Rokeyroad Creamery Vanilla Ice Cream
- Homemade brownies, baked and cooled (cut into pieces)
- Homemade chocolate fudge
- Homemade whipped cream
INstructions
- Line the bottom of a springform pan with parchment paper.
- Soften the chocolate or coffee ice cream slightly and spread evenly into the pan. Freeze until firm, about 1 hour.
- Add a layer of brownie pieces and drizzle with chocolate fudge.
- Soften and spread the vanilla ice cream over the top, smoothing evenly. Top or pipe with whipped cream.
- Freeze until fully set, at least 4 hours or overnight.
